Black Elderberry is a 8-9 ft. tall perennial, deer-resistant, wind-resistant and cold-resistant deciduous shrub that produces a bounty of edible black berry fruits. The berries are rich in vitamin C and contain a good amount of fat, protein and carbohydrate content.
How to Use the Berries:
Pick, boil and mash the berries for use in wine and jellies. Cook the berries to remove any toxins.
As for the white flowers that bloom in April through May, they are lovely looking, fragrant and they are edible as well as medicinal. There are tea recipes online worth a look. Most of which incorporate lemon. Indeed, growing Sambucus canadensis is a rewarding choice for providing function and beauty in your garden.
Germination Procedure: Germinates only after dormancy is broken by the cold of the winter months. Sow on the soil surface in late fall for spring growth. Otherwise, perform a cold/moist stratification treatment on the seeds for two months in the freezer at your home before sowing the seeds on the soil surface. Tip: Be careful not to drown the seeds with hose water once you sow them, the seeds need to stay on the surface until they have germinated.
